Lately, I have been all about cookie bars. Quicker than cookies and just as tasty.
Sometimes the cookie recipes need no altering to become a bar, and other times like in the case of our oatmeal chocolate chip cookies, it does.
This recipe makes 2 9 by 12 pans, but if you have a smaller family, you can easily freeze half the dough to cook up at a later date.
Here is our made-over cookie recipe that created chewy mouth-watering oatmeal chocolate chip cookie bars.
Oatmeal Chocolate Chip Cookie Bars
Ingredients
- 3/4 cup butter
- 3/4 cup coconut oil
- 2 cups brown sugar
- 1 cup granulated sugar
- 4 eggs
- 2 cups unbleached flour
- 1 1/2 cups white wheat flour
- 2 tsp baking powder
- 2 tsp vanilla
- 1/2 tsp baking soda
- 3 cups rolled oats
- 2 cups semi sweet chocolate chips
Instructions
- Combine butter and coconut oil
- Add in sugar and beat until well combined
- Lightly beat eggs with vanilla and add to mixture and stir until combined
- Add in flour and baking soda and stir till combined
- Stir in oats and chocolate chips
- divide batter in half between 2 lightly greased 9by12 pans
- press batter down into pans until it is even
- place in oven at 375 degrees for 15 minutes (edges should be slightly golden by the time you remove the pan)
- cool and then slice into pieces
