oatmeal chocolate chip cookie bars

Lately I have been all about cookie bars. Quicker than cookies and just as tasty.

Sometimes the cookie recipes need no altering to become a bar and other times like the case of our oatmeal chocolate chip cookies it does.

This recipe makes 2 9 by 12 pans but if you have a smaller family you can easily freeze half the dough to cook up at a later date.

Here is our made over cookie recipe that created chewy mouth watering oatmeal chocolate chip cookie bars.

  • 1 cup granulated sugar
  • 4 eggs
  • 2 cups unbleached flour
  • 1½ cups white wheat flour
  • 2tsp baking powder
  • 2tsp vanilla
  • ½ tsp baking soda
  • 3 cups rolled oats
  • 2 cups semi sweet chocolate chips
