Last month I inched away at my housekeeping abilities with Money Saving Mom’s “4 Weeks to a More Organized Home ” series.Our family benefited so much from that series that when Paine announced her “4 Weeks to Fill Your Freezer” series I knew I couldn’t miss out on the rewards of this one.
When my kids were younger I use to freezer cook regularly, but then I sort of fell off the bandwagon. Now its time to jump back on. I know that it will really help free up some time to enjoy the upcoming warm weather season more.
Each weekday evening for the next 4 weeks I will be baking or cooking up at least one item for the intention of adding it to the freezer for later consumption. At the end of my day I will post my progress and link it to Money Saving moms “4 Weeks to Fill Your Freezer” updates.
This morning I woke up to 9 very ripe banana’s. My children won’t touch them when they are dotted, so I knew it was time to either freeze them or use them in cooking. Today I did a bit of both.
I cut up one and placed it on a cookie sheet then popped it in the freezer. Later I put them in a ziplock bag of frozen cut up banana from last week. I will use them up in post long run protein smoothies or yummy banana ice-cream.
When I went to place them in our freezer I found the left over ham I had cubed up last night and froze. I got out a ziplock bag and place it in the freezer, to use by the cup full in casseroles and on pizza.
After the ham was placed in the downstairs freezer, I turned my attention to assembling two loaves of banana bread. My family loves the whole wheat banana bread recipe listed on Money Saving Mom’s site.
Each loaf makes about 10 thick slices and when you omit the chocolate chips it works out to just shy of 300 calories a slice. A little high in calories for a snack but it makes a great filling breakfast when paired with some fresh fruit.
As I was making the banana I thought of a tip to share with you. If I am going to assemble a recipe that creates a lot of food waste I place my garbage can right near my workspace so I can easily dispose of peels and shells without any mess.
I forgot to take a picture of the banana bread straight out of the oven, but this is how I am freezing it. Once it is frozen to firm I plan to put it back into loaves and place each loaf in a large ziplock bag. I am freezing it this way so that my husband can easily grab a piece to take to work with him each day, or for my daughter to microwave for about 30 seconds to eat warm for breakfast.
